Pizza al Tramonto is not a brick-and-mortar restaurant. Not yet, anyway. Right now it is something better: a genuine, bootstrapped, mom-and-pop pizza pop-up run by Robby Lowell and James Swartz, two Santa Clarita locals who decided to turn their shared obsession with contemporary Neapolitan pizza into something the community could enjoy.

The name translates to "Pizza at Sunset" in Italian, and it captures everything this operation is about. Warm evenings, fresh ingredients, and pizza that comes out of a stone-fired oven in under three minutes at a blistering 850 degrees. The kind of pizza that makes you close your eyes on the first bite.

Every pie starts with a pre-fermented dough that develops flavor over days, not hours. It is a professional technique where a portion of the dough is fermented ahead of time to build deeper, more complex character. The Antimo Caputo flour, San Marzano tomatoes, fresh mozzarella, and Pecorino Romano from Italy are all chosen with the same philosophy: keep every ingredient as clean as possible. Nothing in this kitchen is an imitation, and nothing is there just because it is convenient.

Take the mozzarella. Most pizzerias use pre-shredded cheese because it is faster, but pre-shredded mozzarella is coated with anti-caking agents and starches to keep the shreds from sticking together. Pizza al Tramonto uses fresh mozzarella, hand-torn, the way it is meant to be. The Pecorino Romano is imported from Italy and grated by hand, right there in the kitchen. And the San Marzano tomato sauce comes from a clean, four-ingredient recipe they make themselves, designed to be gentle on sensitive stomachs (GERD-friendly, they will tell you) while staying every bit as authentic as anything you would find in Naples. The whole operation is built on a simple idea: use real ingredients, skip the shortcuts, and let the oven do the rest.

The oven itself is a proper stone-fired unit that reaches 850 degrees, temperatures most home kitchens can only dream of. The result is a Neapolitan pizza with a puffy, leopard-spotted crust, a perfectly chewy interior, and toppings that taste like they were grown for this exact purpose.

Pizza al Tramonto is proudly MEHKO Approved (Made in a Home Kitchen, permitted by the Los Angeles County Department of Public Health), which means every pie is prepared in a licensed, inspected home kitchen operation. This is food made with care, accountability, and pride.
